Louis Moreau, Vice-President of the Chablis Commission of the BIVB, explains how winemakers have adapted to climate conditions since the sixties, in order to minimize the destructive effects of spring frosts in the vineyards of northern Bourgogne.
This adaptation continues, and now must also take account of climate change.
